LOUISIANA BAYOU

Treat your Guests to a taste of the Old South featuring: New Orleans Spicy Chicken Gumbo with Okra, Sweet Peppers, Spicy Sausage and Pineapple Salsa on top of Jumpin’ John Fritters; Savoury Sweet Corn and Zucchini Salad tossed with Black Eyed Peas and Scotch Bonnet Peppers in a Lime Vinaigrette; Southern Fried Buttermilk Chicken Drums; Jalapeno Herb Corn Bread with Georgia Peach Chutney; Spiced Pecans and Boiled Peanuts; and, for a hint of Southern Charm, we’ve added Low Country Crab Cakes with Avocado Tartar Sauce.

EAST MEETS WEST

The highlights of this foodscape are: Peking Duck on a Scallion Pancake with Ginger Hoisin Sauce and placed on decorative Birds of Paradise; Black and White Sesame Crusted Salmon beautifully displayed on Japanese Ceramics; Nori California Sushi Roll & Nigiri with Soy Sauce, Pickled Ginger and Wasabi; Cucumber Ribbon Salad in a Sake Lime Reduction and complemented with a Traditional Chinese Tea Station, brewing Oolong and Green Teas.

SOUTH AMERICA

This Colourful Station Marries the Heat of Rio and the Latin Chic of Buenos Aires: Rare Slices of Beef Tenderloin marinated in Argentinean Chimmichurri Sauce served on Brazilian-Style French Bread & Herbed Scones; a Trio of Spreads including Smokey Habanera Aioli, Spicy Red Pepper Jelly and Tomatillo Salsa; and Rio’s famed flaky Ipanema Chicken and Raisin Empanadas.

BRUSCETTA BAR

“Bruscare” in Italian means “to Roast over Coals”. This Traditional Garlic Bread is made by rubbing Slices of Fresh Calabrese Bread with Extra Virgin Olive Oil, Roasted Garlic, Salt and Pepper. The result is simply delicious on its Own, but when topped with choices of Sautés like Wild Porcini Mushrooms, Rosemary and Shallots, Black Olive Tapenade, Tomato Neapolitan or Eggplant Capanata will have you singing “That’s Amore” all night long!

PANINI STATION

The stars of this station are Grilled Foccaccia Sandwiches with a tempting variety of toppings that include Grilled Vegetables, Roasted Garlic, Caramelized Onions, Pesto, Grilled Eggplant, Tomatoes, Olives and Roasted Peppers and a choice of Goat Cheese, Mozzarella and Fresh Shaved Parmesan, Genoa Salami, Cured Proscuitto, Capicolla and Sliced Grilled Herbed Chicken Breast.

THE BOUNTY

Snow Crab Cocktail Claws, Little Neck and Cherry Stone Clams, Kiwi Mussels, Lobster Tail and a Jumbo Prawn Pyramid on Beds of Crushed Ice and Bountiful lush greenery are featured in this foodscape. Our Homemade Seafood Sauces are nestled in chilled Martini Glasses with Fresh Lemon Wedges. If you can not be near the sea let us bring the sea to you.
